Quinoa Recipe Roundup
Today on my Wednesday Wellness Wisdom video I shared about how much I love quinoa and why I believe it is a great staple food for emotional eaters. Check out some of the reasons why I love quinoa and read about its nutritional value.
Want to make a tasty veggie bowl? Here’s a recipe for you:
Veggie Bowl (serves 2)
- ½ cup quinoa
- 2 Tablespoons turmeric or curry (optional)
- 1 cup water
- 1 cup broccoli, coarsely chopped
- 1 cup cauliflower, coarsely chopped
- 1 cup carrots, coarsely chopped
- 1 cup spinach, coarsely chopped
- 1 red pepper, coarsely chopped
- ¼ cup fresh parsley, finely chopped
- ¼ cup sunflower seeds
- ¼ cup pumpkin seeds
- juice of ½ a lemon
- sea salt and cayenne pepper, to taste
- drizzle of olive oil or flax oil
- Rinse quinoa thoroughly and place in pot with water and turmeric or curry powder.
- Bring to a boil and then simmer for 15-20 minutes. Remove from heat, allow to sit for 5 minutes. Stir
with a fork.
- Steam broccoli, carrots, and cauliflower for 6 minutes.
- Chop spinach, parsley and red pepper.
- In a large mixing bowl, toss together quinoa, steamed veggies, spinach, red pepper, and parsley. Add the raw seeds and drizzle with lemon juice, sea salt, cayenne pepper and oil.
- Serve cold or warm.

Quinoa is indeed a superfood; a nutritional powerhouse. It is also tasty and versatile. Once you make a pot of quinoa for a specific recipe, you could put some aside for a snack. I always think of snacks for emotional eaters. It’s important to have a list of go-to foods that you can enjoy any time of day.
Maybe add an apple and perhaps a little lemon juice to quinoa. Another day you could enjoy the quinoa with some black beans and guacamole. Or, have some quinoa with some sliced peppers and salsa. Don’t be afraid to try different combinations and figure out which ones you like the best.
